Signature Rockpool dishes are prepared on Polished Volcanic Rock superheated to 440C. This method of cooking has been used since 2000BC. No oils or fats are used and so is a very healthy way to eat. Kinsale is one of the great restaurant towns of Ireland and the Carlton Hotel is as good as it get in Kinsale. This is a classy restaurant with great service. You feel good coming out of the place. I met some friends there lately and we plan go go back for our Christmas get together. Not the cheapest place in Cork to eat, but you get what you pay for.

As far a I am concerned, Kinsale is the capital of Ireland for food and in Kinsale, the Carlton Hotel is as good as it gets. It is an expensive town, but a town with a passion for food. Well done Kinsale.
