Greek Feta Salad

  Ingredients:

- 1/3 cup white wine vinegar
- 2 cloves garlic, minced
- 1 tbsp each chopped fresh oregano and basil
- 2/3 cup olive oil
- 2 tsp fresh lemon juice
- 1 tsp salt 5 mL
- 1/4 tsp pepper 1 mL
- 8 cups mixed greens
- 1 English cucumber, sliced
- 1 large tomato, chopped
- 1 small red onion, sliced
- 1 cup crumbled feta
- 1/2 cup pitted and sliced black olives

Directions :

Whisk the vinegar with the garlic and herbs; let stand at room temperature for 1 hour.
Whisk in the oil, lemon juice, salt and pepper until well combined. Chill dressing in the refrigerator for 15 minutes.
Combine the greens in a large bowl with the cucumber, tomato, red onion, feta and olives. Whisk dressing; pour over the salad and toss to combine.
