- 1 kg of beef
- 2 onions
- 3 carrots
- 1 clove garlic
- 2 tablespoons flour
- 30 cl of red wine
- 1 bouquet garni
- 100 g of bacon
- 250 grams of mushrooms
- salt, pepper
- oil

Preparation :

1. Cut the meat into cubes of about 5 cm side. Peel and slice onions. Peel and cut carrots into rounds. Crush the garlic.
2. In a casserole, heat 3 tablespoons of oil. Remove meat and let them take a few minutes without stirring. Go back and let them take a few minutes.
3. Add onions, garlic and carrots. Salt lightly, mix well and let cook for 5 minutes. Add flour, mix well and then all wet with red wine. Fill with water to cover meat. Add the bouquet garni. Bring the mixture to a boil and then close the cooking pot with lid and simmer 2:30 to 3 hours over medium heat.
4. Meanwhile, heat the bacon without a stove, without adding fat. When well browned, remove excess fat and add the mushrooms. Let simmer 5 minutes and remove from heat. Add the bacon and mushrooms in the casserole.
5. Serve hot with potatoes.
