 Portuguese Morue Braz

Ingredients:
600 g of cod
2 onions into thin slices
2 cloves garlic, sliced
500 g chips (apples matches / straw)
6 eggs beaten
1 small bunch of fresh chopped flat parsley
ground black pepper
3 tablespoons olive oil
12 black olives
Preparation:
To poach cod. Drain. Remove skin and bones.
Fry the garlic and onion slices in olive oil. Add cod tapered. To gild without ceasing to stir.
Stir in the chips poached cod. Mix for 5 minutes. The chips must retain some firmness.
Stir in beaten eggs, pepper and chopped parsley. Stir well and very quickly remove from heat. The eggs must remain soft and yellow.
Garnish with black olives. |
