 African Banana Chicken

INGREDIENTS
1 chicken
8 green plantain bananas
1 bouquet garni
2 eggs
1 glass of dry white wine demi-sec
onions
salt, pepper
METHOD
Cut the raw chicken.
To parboiling pieces for 1/2 hour.
The cook then from boiling for 20 minutes in 1 liter 1/2 water with bouquet garni and onion cut into slices.
Drain and dry the pieces.
Melt butter in a casserole and bring back the chicken pieces to brown.
Cover them with white wine and a glass of broth, salt and pepper.

Remove the sauce, to reduce from one-third of its volume. The link with 2 egg yolks, add the juice of a lemon and serve the chicken pieces coated with sauce and surrounded with bananas.
Peel the bananas and slice into 4 or 8 depending on their size. The blanch in boiling water, drain and dry with a clean cloth, then passing them to the boiling oil, then incorporate Chicken. |
